World's Best Roast Turkey


I'm having company for dinner tonight, and I love roasting a turkey. The secret to my success is to start with a bed of baby bok choy in the bottom of the roast pan. These reduce down to almost nothing but help you to create the most flavourful and dark brown gravy you have ever had. At this point I add a bottle of beer as well. A Coors Lite was in the fridge, so in it went!







I liberally sprinkled sage, parsley, smoked salt and pepper all over the turkey.



Here she is heading into the oven. I placed a couple strips of bacon on the breasts  so that I don't have to constantly baste the meat. Then snuggled in some veggies such as stalks from the brocoli, big carrot hunks, and some cauliflower left over from last nights soirĂ©e.  Now into the oven for a few hours. This bird was only 9 lbs.. So I'm allowing 4 hours on 350, can always adjust as things progress.

The table is all set with Grandma Stewart's china.
White Alstromerias as the centrepiece. My favourite flower to use at Christmas time. Sometimes hard to find the pure white ones like these!
